Ingredients
- 4 salmon fillets (about 6 oz. each)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 zucchini, sliced
- 2 cloves garlic, minced
- 2 tbsp. olive oil
- 1 tsp. dried oregano
- Salt and black pepper, to taste
- 1 lemon, sliced
- Fresh parsley, chopped, for garnish
Instructions
- Preheat the oven to 375°F.
- Place the salmon fillets in a baking dish and season with salt, black pepper, and dried oregano.
- In a separate bowl, toss the sliced vegetables with minced garlic, olive oil, salt, and black pepper.
- Spread the vegetables around the salmon fillets in the baking dish.
- Arrange lemon slices on top of the salmon fillets.
- Bake for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
- Garnish with fresh parsley and serve.
