  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 zucchini, sliced
  • 2 cloves garlic, minced
  • 2 tbsp. olive oil
  • 1 tsp. dried oregano
  • Salt and black pepper, to taste
  • 1 lemon, sliced
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 375°F.
  2. Place the salmon fillets in a baking dish and season with salt, black pepper, and dried oregano.
  3. In a separate bowl, toss the sliced vegetables with minced garlic, olive oil, salt, and black pepper.
  4. Spread the vegetables around the salmon fillets in the baking dish.
  5. Arrange lemon slices on top of the salmon fillets.
  6. Bake for 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
