Corned Beef and Cabbage Rolls

Ingredients

  • 8 large cabbage leaves
  • 1 pound corned beef, cooked and shredded
  • 1 cup cooked and chopped carrots

  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  • 1/4 teaspoon dried rosemary
  • 1/4 teaspoon dried oregano
  • 1 cup beef broth

Instructions

  • Preheat your oven to 375°F (190°C).
  • Bring a large pot of salted water to a boil. Add the cabbage leaves and blanch for 2-3 minutes or until they are softened. Remove from the water and place on a clean kitchen towel to drain.
  • In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes, or until the onion is translucent.
  • Add the corned beef, carrots, potatoes, salt, black pepper, paprika, thyme, parsley, rosemary, and oregano to the skillet. Mix everything together well.
  • Spoon the corned beef and vegetable mixture onto the center of each cabbage leaf.
  • Fold the sides of each cabbage leaf over the filling, then roll the leaf up to create a tight roll.
  • Place the rolls seam-side down in a baking dish.
  • Pour the beef broth over the rolls, then cover the dish with aluminum foil.
  • Bake for 35-40 minutes or until the rolls are heated through and the cabbage is tender.

Serve hot and enjoy!

Note: You can also serve the rolls with additional beef broth or mustard sauce if desired.
