Corned Beef and Cabbage Rolls

Ingredients
- 8 large cabbage leaves
- 1 pound corned beef, cooked and shredded
- 1 cup cooked and chopped carrots

- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika

- 1/4 teaspoon dried rosemary
- 1/4 teaspoon dried oregano
- 1 cup beef broth
Instructions
- Preheat your oven to 375°F (190°C).
- Bring a large pot of salted water to a boil. Add the cabbage leaves and blanch for 2-3 minutes or until they are softened. Remove from the water and place on a clean kitchen towel to drain.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and sauté for 2-3 minutes, or until the onion is translucent.
- Add the corned beef, carrots, potatoes, salt, black pepper, paprika, thyme, parsley, rosemary, and oregano to the skillet. Mix everything together well.
- Spoon the corned beef and vegetable mixture onto the center of each cabbage leaf.
- Fold the sides of each cabbage leaf over the filling, then roll the leaf up to create a tight roll.
- Place the rolls seam-side down in a baking dish.
- Pour the beef broth over the rolls, then cover the dish with aluminum foil.
- Bake for 35-40 minutes or until the rolls are heated through and the cabbage is tender.
