Ingredients
- 4 cod fillets (6 oz. each)
- 1/4 cup extra-virgin olive oil
- 2 garlic cloves, minced
- 2 tablespoons lemon juice
- 1 tablespoon chopped fresh parsley
- 1 tablespoon chopped fresh basil
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 large tomato, diced
- 1/2 cup Kalamata olives, pitted and chopped
- 1/2 cup crumbled feta cheese
Directions
- Preheat the oven to 400°F.
- In a small bowl, whisk together the olive oil, garlic, lemon juice, parsley, basil, salt, and black pepper.
- Arrange the cod fillets in a baking dish. Pour the olive oil mixture over the fish.
- Scatter the diced tomatoes and chopped olives over the fish.
- Bake the fish in the preheated oven for 15-20 minutes, or until it is cooked through.
- Remove the baking dish from the oven and sprinkle the crumbled feta cheese over the fish.
- Return the dish to the oven and bake for an additional 2-3 minutes, or until the cheese is melted and bubbly.
