Shamrock Sugar Cookies

Ingredients

  • 1 cup unsalted butter, at room temperature

  • 1/2 tsp salt
  • Green food coloring
  • Shamrock cookie cutter
  • Additional granulated sugar for rolling the dough

Instructions

  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  • Add a few drops of green food coloring to the dough and mix until evenly colored.
  • Shape the dough into a disk and wrap it in plastic wrap. Chill in the refrigerator for at least 1 hour.
  • Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • On a floured surface, roll out the dough to 1/4-inch thickness.
  • Cut out shamrock shapes using a cookie cutter and transfer them to the prepared baking sheet.
  • Sprinkle the tops of the cookies with granulated sugar.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • If you are feeling artistic, decorate the cookies with icing, sprinkles, etc.
